ENG Dear Hivers friends, Autumn is my favorite season (perhaps tied with spring), and one of the main reasons is definitely **eating porcini mushrooms**. These are truly special mushrooms that can't be cultivated, but can **only be found in the wild**. In Italy, my home country, they grow from north to south in the undergrowth of the Alps and Apennines.

ITA Cari amici Hivers, L’autunno è la mia stagione preferita (forse a pari merito con la primavera) e uno dei motivi principali è sicuramente poter **mangiare i funghi porcini**. Si tratta di funghi davvero speciali, che non si possono coltivare, ma possono **solamente essere trovati in natura**. In Italia, il mio Paese, sono diffusi da nord a sud nel sottobosco di Alpi e Appennini.

The flavor of this mushroom is very **intense, savory, and reminiscent of the scents of the forest**. It's also a very interesting food nutritionally. In fact, 100g of porcini mushrooms provide **just 25 kcal** and a whopping **3g of protein**! They're included in low-calorie autumn diets and are a **versatile food** to use in the kitchen.

Il sapore di questo fungo è molto **intenso, saporito e ricorda i profumi del bosco**. È anche un alimento molto interessante sotto il profilo nutrizionale. Infatti, 100 g di porcini apportano **solo 25 kcal** e ben **3 g di proteine**! Viene inserito nelle diete autunnali ipocaloriche ed è un **alimento versatile** da utilizzare in cucina.

Every year in **Castel del Rio**, a small town between Florence and Bologna, the **Porcini Mushroom Festival** takes place. A unique opportunity to taste this mushroom in so many different variations! I attended the festival with my boyfriend and we were **amazed** at how many recipes they were able to create using this basic ingredient. Here's the menu: - *Mixed crostini with porcini mushrooms*; - *Porcini mushroom flan in a creamy sauce*; - *Sautéed mushrooms with Grana Padano*; - *Tagliatelle alla boscaiola*; - *Potato tortelli with porcini mushrooms*; - *Fried porcini mushrooms with squacquerone cheese*; - *Pork fillet with porcini mushrooms*.

Ogni anno a **Castel del Rio**, un piccolo paese tra Firenze e Bologna, si svolge la **Sagra del Porcino**. Un’occasione unica per assaggiare questo fungo in tantissime varianti diverse! Ho partecipato alla sagra insieme al mio fidanzato e siamo rimasti **stupiti** di quante ricette siano stati in grado di fare partendo con questo ingrediente base. Ecco il menu: - *Crostini misti con porcini*; - *Flan ai funghi porcini in salsa cremosa*; - *Funghi trifolati con grana padano*; - *Tagliatelle alla boscaiola*; - *Tortelli di patate con porcini*; - *Porcini fritti con squacquerone*; - *Filetto di maiale con porcini*.

Even though the weather wasn't the best, because it was very cloudy, **we spent a beautiful day in the mountains and tasted these delicious dishes** (I had the vegetarian version, my boyfriend the original version).
