Greeting Hive food lovers. Today I bring you my latest sweet and healthy creation - chocolate-covered stuffed dates. A sweet, healthy snack that you can grab anytime you get hungry throughout the day.

They are super delicious, 100% plant-based, gluten-free, free of added sugar, and super easy to make.

Snacking may have a bad reputation, but if you choose your snacks wisely they can be an important part of your diet. They can give you the extra energy kick you need to finish your work in the afternoon or when you exercise.

Healthy snacking between meals can also help you to get extra nutrients into your diet and decrease your hunger at the main meal to prevent overeating.

Ingredients


For this recipe, I didn’t measure the exact ingredients as you can make as many as you like. I made about 18-20 in one batch. To be fair I should have made some more lol. They were so good we nearly ate them all the same day.

  • Dates
  • Cashew butter
  • Roasted walnuts
  • Cacao powder
  • Extra virgin coconut oil (melted)

Directions


Roast walnuts in the oven or a dry pan. I roasted mine in the oven this time.

To make the chocolate sauce, start by mixing equal parts of cacao powder and coconut oil. If you like it sweeter you can add maple syrup or any other sweetener of your choice. This will also help you to thicken the chocolate sauce. I, however, don’t like sweet chocolate but enjoy the bitterness of the cacao, so I added a little bit more of the cacao powder until I had a consistency that resembles a chocolate sauce. Set aside.

If you are using dates with a pit as I did, remove them by making a slit along each date and carefully remove the pit.

Depending on how big your dates are, add about Β½ to 1 heaped teaspoon of cashew butter inside each date.

Crush the roasted walnuts. Sprinkle each date with a good pinch of crushed walnuts.

Using a toothpick or skewer, dip each date into the chocolate sauce until completely covered. Place the chocolate-covered dates on a tray lined with parchment paper. Sprinkle with some extra crushed, roasted walnuts.

Place the dates in the freezer or fridge to allow the chocolate to set.

Keep leftover chocolate-covered dates in a sealed container in the fridge for up to a week or two. But believe me, they won’t last that long!
