Lunch we had mashed potato + green salad. And I have said we will be having homemade pan mee for dinner. So here we have the recipe for the pan mee.
Soup base
Anchovies
Pork bones
Ginger
- Bring a pot of water to boil. Blanch the pork bones.
- Saute the ginger and anchovies.
- Pour water to the sauteed ginger and anchovies. Add the blanched pork bones. Boil the soup for 30 minutes.
Ingredients:
Minced meat
Meatball
Black fungus
Sliced garlic
Romaine lettuce
- Marinate the minced meat with sesame oil, dark soy sauce, light soy sauce and pepper. Let it sit for 30 minutes.
- Saute the garlic, black fungus and minced meat.
- Blanch the romaine lettuce.
- Cook the meatball in the soup prepare earlier.
Pan mee dough
All purpose flour
Egg
Sesame soy sauce
Black pepper
Mixed herbs
Sesame oil
Water
- Sieve the all purpose flour. Add in all the ingredient. Then mixed everything up.
Here you can see my three little chefs helping me mixing up the ingredients.
Keep mixing until it becomes a dough.
If your dough is too sticky, then add a little bit more flour. So the tip here is add in water bit by bit.
Knead the dough until the surface becomes smooth.
Then let the dough sit and rest for an hour.
After that we can start rolling the dough and preparing to make our hand torn pan mee.
Again, my girls are back in action.
To prevent the rolled dough stick to each other, remember to put some flour between two rolled dough.
After that, bring a pot of water to boil, add some salt. Then when the water is boiling, start tearing the rolled dough into small pieces and put in the boiling water. Cook for a few minutes. Cook one serving at a time so that all the hand torn noodle are cooked thoroughly at the same time.
Serve the noodle with the soup and ingredients we made earlier. And there you go, home made hand torn pan mee. Yum yum yum.
