Nothing is more refreshing than a mojito on a hot day, except maybe this variation on the classic rum drink.
This twist on the drink is still the same minty, sweet beverage as a typical mojito, but with two adaptations that make it even tastier; using a lightly flavored coconut rum and replacing the lime with lemon in this version of the drink add an extra layer of flavor.
I know, coconut, lemon, and mint do seem like a strange combination, but it yields fabulous results. The three flavors coalesce to create this fantastic twist on a classic drink that I reccomend any mojito lover should try. One sip, and you won't regret it.

Ingredients:
- 1/2 lemon, quartered in slices
- 10 mint leaves
- 1 tablespoon cane sugar
- 1.5 oz. coconut rum
- 1 cup ice
- 1/2 cup club soda
- In a tall glass, muddle the mint with the flesh of 2 lemon wedges.
- Place the sugar in the glass, squeeze the lemon juice from one wedge in the glass, stir.
- Fill the glass with ice, pour the rum and club soda in amd stir gently. Taste and add more sugar if necessary. Garnish with remaining lemon wedge and enjoy.
