I had all kinds of rules about not leaving food out due to bacteria growing on it. These have all gone out the window in the last years.
First I lived with a Mexican family that cooked at night, left the food out until morning and then ate it for breakfast. None of them died or got sick.
Another tenant and I talked about this often. Both of us were the type to put food into the fridge. We remembered our mothers telling is about bacteria and how it would grow on the food and make us sick.
“Apparently, not.” we both said in wonder, as the overnight food-leaving-out routine went on day after day.
Then I got to SE Asia and eat food all the time now that has been left out. People do not refrigerate eggs here and tell me this can go on for a couple of weeks with no trouble.
Every once in a while someone tells me to be sure to eat something on the day I bought it since it will not be good after 24 hours. But what if I put it in the fridge? Hmm… It’s ok – I just eat it quick.
I mostly eat out and cannot supervise whether or not food goes into the fridge. And so I do not worry about it and wonder why I used to in the states.
