Hei Vegan Lovers,this is my post to follow New Plant Based Challenge by theme : Fruity but savaory. so I will process bananas into a savory and spicy dish.
I will go to the garden to look for bananas that are young but contain and the spices needed to make this dish.
I took a piece of ginger that was not too old
I will take turmeric leaves and rhizomes.
I also took a few stalks of lemongrass and one segment of galangal.I'm very happy that I don't have to buy a lot of spices to make Spicy and Savory Banana Curry, the ingredients I need are widely available in my small garden.
It's time to process bananas into spicy and savory dishes,before processing we will prepare the bananas.
First, we cut the ends and the base of the banana. Then we provide water to soak the bananas which we will peel the outer skin.
because the bananas are still young so I don't throw away the inner skin. after the banana is finished peeling, then we cut it into 3 or 4 parts.
after that I continued to prepare the other ingredients, namely : tempeh
I also added two pieces of tempeh and I cut them into cubes.
The seasoning that I use to make banana curry which is spicy and savory is:
Garlic 5 cloves
red onion 3 cloves
red chili 50 grams
10 pieces cayenne pepper
1 piece ginger
turmeric 2 segments
1 segment galangal
2 pecans
coriander 1 teaspoon
pepper powder to taste
salt 1 tablespoon
sugar 1 teaspoon
2 pieces bay leaf
2 stalks lemongrass (take the white part)
1 piece of turmeric leaf
1 pack thick instant coconut milk (65 mL)
1 liter of water
here are all the ingredients we need.
how to cook it:
first step: wash all the ingredients for the seasoning, then I peel the skin of the onion, garlic skin, ginger skin, turmeric skin and galangal skin. Don't forget to separate the chili stalks. put in a blender all the ingredients for the spices, namely onion, garlic, red chili, cayenne pepper, candlenut, coriander, turmeric, ginger, galangal and lemon grass.
second step: add instant coconut milk into the blender (only half, leave the other half), add a little water.
third step : Blend all ingredients until smooth.
fourth step: heat a frying pan (I don't use cooking oil)
fifth step: put all the spices that have been mashed into a hot pan.
sixth step: add the bay leaf and turmeric leaf, stir all the ingredients until they emit a fragrant aroma.
seventh step: add water to the pan containing the spices that have been sauteed.
eighth step: after the coconut milk boils then add the banana pieces.
the ninth step: enter the tempeh pieces then stir.
tenth step: add sugar, salt and pepper powder. stir so that the coconut milk doesn't break when cooked.
the eleventh step: after the bananas are soft then we put back the rest of the coconut milk. then we stir until the coconut milk is evenly distributed, then turn off the stove.
Spicy and savory banana curry is ready to be served.
This dish can be served with warm rice or bread. This young banana curry is rich in flavor because we use a lot of spices to cook it.
