BBQ Skewers - using ingredients that already have in the kitchen

This week's topic on Hive Top Chef is "BBQ", This topic came right on time because I'm a bit struggling with what to make. Instead of cooking the BBQ steak. It’s time to try something fun, like meat and sausage grill skewers with cherry plum and crunch vegetables.

I have always told you many times that I'll try to empty my fridge and buy less. So these BBQ Skewers perfectly fit well with my challenge. The options of the ingredients are endless and best of all are just about anything can be on a skewer.

My BBQ Skewers can be cooked in 30 minutes without any marinades. This recipe is super easy to make and I got inspired by the Thai street food barbecue skewers that can find anywhere in Thailand.

The main highlight of the dish is the BBQ sauce which I use the simplest seasonings that are flavorful starting by sautéing the mashed garlic, tomato sauce, chili sauce, oyster sauce, soy sauce, and sugar. Then let it simmer until the sauce gets slightly thicker. It's spicy, salty, and sweet with an oriental aroma sensation.

BBQ Skewers

 

  • I used wooden skewers for my recipe so better to soak them in water for 30 minutes first before grilling as they can get burnt easily over a hot grill.

  • For the protein session, I used the pork neck with a tiny fat, hot dog, bacon wrap, and bologna ham is always the best choice for BBQ skewers.

  • In addition to cooking the pork and sausage on skewers, I also add vegetables and fresh fruits. The key is to choose veggies that are easy to skewer. So I decide to use onion, chili, cherry tomato, and cherry plum.

  • After skewers the meat and veggies on the wooden sticks then grill over a stove grill pan. Then baste with butter and BBQ sauce on both sides and cook for a few minutes on each side to caramelize. Lastly, sprinkle BBQ Skewers with a bit of ground black pepper.

INGREDIENTS

 

  • 200 Gram Variety of Sausage
  • 6 Pieces Bologna Ham
  • 100 Gram Pork Neck
  • 2 Small Onion
  • 10 Thai Red Chili
  • 15 Cherry Tomato
  • 7 Cherry Plum
  • 1 Tablespoon Butter
  • 1 Teaspoon Ground Black Pepper
  • 1/2 Tablespoon Vegetable Oil
  • 1 Tablespoon Soy Sauce
  • 1 Tablespoon Oyster Sauce
  • 2 Tablespoon Tomato Sauce
  • 2 Tablespoon Chili Sauce
  • 2 Tablespoon Sugar

INSTRUCTIONS

 

STEP 1 - PREPARE THE VEGETABLE, FRUITS, AND MEAT.

 

First rinsed and dried the vegetables before cutting them. Cut a cherry plum in half and twist it.
 



 

Open and use a knife or spoon to remove the seed.
 



 

Peeled the onions. Then dice the onion into the big four equal quarter squared and just cut the chili into a half
 

 

Sliced the pork into the thinly sliced and cut the sausage into coin slices.

STEP 2 - A VERY SIMPLE BBQ SAUCE

 

Heat olive oil in a saucepan and quickly add the grind of garlic into the saucepan. Then whisk the garlic until the smallest pieces of garlic start to turn golden and release the fragrance aroma.

Add the chili sauce and tomato sauce into the saucepan and reduce the heat to low, then bring to a simmer.
 

 

 

Add the oyster sauce, soy sauce, and sugar. Then whisk for 1 minute and stir occasionally. The BBQ sauce can keep in the fridge for up to a month.
 

 

 

STEP 4 - SKEWERS

 

To a skewer, rotate adding in cheery plum, sausage, and chili. Then continue to add sausage, onions, and cherry tomato.
 

 


 

Repeat the same instructions with cocktail sausage and bacon wrap.
 

 


 

To a skewer, rotate add in cheery plum and thread the thinly sliced pork. Then add the onion, sliced pork, chili, sliced pork, and cherry tomato.
 

 


 

I have so much fun with BBQ Skewers recipes because I can mix and match the ingredients as my preference. Such a cute skewer. isn't it?

This recipe is possible to make around 15 BBQ Skewers.

STEP 5 - GRILL

 

Heat a grill pan till it is very very hot. Using a silicone brush, lightly grease the grill pan with butter. Place the prepared skewers in a single layer.
 

 

Sear for 3 to 4 minutes before turning.

Baste the skewers with butter before turning. Sear again for 3 to 4 minutes.

Once the BBQ is cooked then baste the skewers with BBQ sauce on both sides.

Lastly, sprinkle with ground black pepper and set this batch aside.

Once the first batch is done, clean the grill pan and repeat the same instructions.
 

 

STEP 6 - PLATTER

 

Remove the BBQ from the grill and set them aside for 5 minutes, on a pan or platter, before serving.
