Birthday Cake 1/2: Carrot Cake | Recipe


Most Requested Cake

This carrot cake is the most requested cake amongst my friends and family so far (well, except for my girl who loves chocolate cake). I have been craving for this cake for over a week already, but only had the chance to make it in time for my daughter's 6th birthday last June 19th.

I first shared here this carrot cake recipe two years ago, you can check the post Baking Carrot-Mango Cake. A Weekend Special Treat. However, I did not add mango this time, just the carrot. *If you ever have less carrots, you can add grated apples too.

No oven, no problem!

I had three dishes to cook that involved baking last Friday for my girl's birthday, so I decided it was time to buy LPG for the oven. Unfortunately, there seemed to be a problem with the regulator (it leaks!) so we were not able to use it still.

To bake my dishes, I used a large pot with sand, more like a clay oven as you will see in the video.

Ingredients + Measurements:

2 large carrots, grated (around 2 cups)
2 1/2 cups all purpose flour
1 cup brown sugar
1 cup white sugar
3 medium sized eggs
1 1/2 cups vegetable oil
2 tsp cinnamon powder
2 tsp baking powder
2 tsp baking soda
1 tsp salt
1 tsp vanilla extract
chopped walnuts (for toppings)

Cream Cheese Frosting:

1 cup cream cheese
1 cup confectioner's sugar
1/2 cup plain yogurt

Really delicious, moist and dense carrot cake.

The cream cheese complements the cake so well.
