
Greetings from Suriname everybody. A few days ago I made date and tamarind chutney to eat with vadas. When we lived in Cambodia we made two different kinds of vadas. One we put in a sandwich and the other me made into a burger with lettuce, cucumber, tomato and with another sauce also.
This sandwich was on the menu in our small restaurant, but I just show you how to make the date and tamarind chutney today today. I like to make this sauce when I have all the ingredients, then put in the refrigerator for eating when we want to eat chutney with something.
This recipe I know from the chef @justinparke, he knows how to make Indian food so much more than me, and so delicious too. I just know a little bit, but I love to cook ASEAN style food more. I want to share this recipe for the @LotusShares Plant Power Cooking Challenge | Week #5.

Ingredients
- 8 big dates or 10 if small
- 1/8 cup tamarind
- 1/8 cup brown sugar
- 1 tsp cumin seeds
- 1 tsp fennel seeds
- 1 tsp salt or taste
- 1/2 tsp chili powder
- 1/2 to 3/4 cup water, or as you like


I removed the seeds from the dates.

Then I roasted cumin and fennel until aromatic and a little brown. After I grind them well.

Then boil water and add dates, tamarind, sugar, salt, chili powder, cumin powder, fennel powder, and stir a little bit. Boil them a few minutes, then reduce the heat to low.


After let it until cool and grind it well. Taste, itβs ready. When you grind it, you need to look at it and see if you want to add more water or not.

If you like spicy add crush chilies to it. This is an easy recipe to make and delicious with fried vadas or other food.
