Corn or Maize Meal is the staple food in many households that live on the breadline here in South Africa.
Not surprising as we are the largest producer of Corn/ Maize in Africa, making this a super affordable staple.
Kind of corny that Phutu made with maize meal is also eaten in well-to-do homes at Braais (BBQ's), usually lathered in a tomato & onion gravy as an accompaniment with loads of BBQ'd meat.
The best way to describe Phutu is that it has a similar texture to Polenta or Grits.
Mine workers in Soweto first started making a spicy dish called Chakalaka with leftovers like baked beans, mixed vegetables, onions, tomatoes and grated carrots which they would eat together with their phutu. This was nourishing enough to give them stamina for the next day's hard work underground.
Another product of Corn/Maize is Corn Flour, which all home cooks are familiar with; this is used as a thickening agent in gravies, white sauces, blanc mange and so forth.
Everyone's favourite though is Sweet Corn, and that is what will be the star in my kitchen today as I show you how to make a scrumptious Cheesy & Corny Pizza, using the easiest ever pizza base which literally can be put together in a couple of minutes.
Super sweet Corn on the Cob served with a Basil,Tomato & Onion Sauce, Garlic & Herb Butter and mashed Avocado; inspired by a now defunct local foodie magazine, Fresh Living; a casualty of Covid Lockdown!
Let's get Cooking!
Easiest ever Pizza Base
- 2 cups Self-raising Flour
- 1/4 tsp Salt
- 1/2 cup Canola or Olive Oil
- 1/2 cup Boiling Water
Mix to a soft dough and press into baking pan with fingers, cut into circles.
Topping
- 2 diced Onions
- 4 diced Tomatoes
- Crushed Garlic
- Diced Fresh Basil
- 1 diced Yellow Bell Pepper
- 3-4 Corn on the Cob, stripped off cob (frozen corn can be used)
- 1 bunch diced Spring Onions
- 2 cups grated Cheese
Sautee Onions & Garlic in a little Olive Oil, add Tomatoes, Basil & seasoning of choice, cook till soft - leave to cool.
Top Pizza base with Tomato & Onion Sauce, Yellow Peppers, Corn, Spring Onions and lastly Cheese.
Bake at 200°C fan oven approx 20 min
