I am here to join another fantastic #fruitsandveggiesmonday hosted by @plantstoplanks and initiated by @lenasveganliving.
Today, it is of my great pleasure to share one of my favorite salad, I called it mixed beans salad.
This delicious salad consist of Red kidney beans and chickpeas, and if you combine it together, it will give you a high protein salad.
You can use beans from the tins or fresh one’s just remember to soak it overnight or for at least 8 hours.
(The longer it soaked, the easier to cook)
Ingredients
Onion (cut in rings)
Coriander leaves (roughly chopped)
Chickpea (½) boiled
Red kidney beans (½) boiled
Dressings
Extra virgin olive oil
Salt
Pepper
Dried basil
Lime
Make the dressings and combine it to the ingredients (chickpea, red beans,coriander and onion). Mix well to distribute the flavor.
Easy and delicious! This salad is also ideal for strenuous work out or athletic people.
