A hawker centre, or cooked food center is a place where there are many stalls selling a variety of food – usually, local cuisines. It is a one-stop destination for high quality local cuisines at very affordable prices. There are many of these hawker centers all over the island. Some of these are open 24 hours, giving the people the convenience of dining on simple, and inexpensive local cuisines, at all hours of the day. Most people agreed that they are the place to go to for local cuisines, because the local cuisines taste more authentic at the hawker centers than those in the restaurants.

Before hawker centers came into existence, there were street hawkers selling food from their mobile food carts. However, due to concerns for hygiene, the government built hawker centers where the street hawkers can come under one roof, and the Health Ministry can better check on hygiene standards.

The hawkers rent the stalls from the government at a subsidized fee. This is a vast improvement for every one. The environment is more hygienic, and more comfortable. Facilities like tables and chairs are provided. Utilities like water, gas and electricity are available but paid by the hawkers themselves. These is very convenient for the hawkers who otherwise have to bring along your tables and stools, lamps and cleaning water on their mobile cart. Plus which, now, come rain or shine, they will always have a roof over their head, and business will not be disrupted.

If you see a queue, it means that the stall has got a good reputation, and the food is very good.

This is the 'Food Street' in Chinatown. The operators of the food stalls were selected for their good quality and standard of their fare. Food Street caters more to the tourists, so the food here is a little bit more pricey, or what they call ‘tourists price’. But still affordable prices.

Besides the hawker centers, there are food courts. The difference between a Hawker Center, and a Food Court is that the Food Court is air conditioned, cleaner and neater, and they are usually in a shopping center. Diners can dine in comfort, before, after, or in between shopping. On the flip side, one has to pay for these comforts. Hence, the price of food at the Food Courts are slightly higher than those at the hawker centers. They are still very affordable, and some do not mind paying a little extra for dining in comfort.

Shopping and eating are two favourite past-times of the locals. Where there is a Sale, where there is good food, you will find crowds of locals.
