CwU #32 Theme - @cookwithus Pot Luck Dinner to Benefit @adollaraday Charity
Woo yay! just couldn't wait for this weeks charity challenge for @adollaraday, I was just chatting with @pennsif the creator of @adollaraday this week and he mentioned to me how they have managed to raise $700 for the month of October to help people from all over the world, this is incredible!
I'm also currently raising money for Lombok crisis relief & an eco-brick plastic sustainability project. I'm just starting to realize there is more than just the conventional route and steemit & blockchain open up so many new possibilities to help those most in need all over the world.
My entry to the pot luck dinner is this festive spiced quince & cinnamon nice cream sundae
I'm a big big fan of this ancient loved spice: ceylon cinnamon. My love for it has really grown over the last weeks from finding out about all it's glorious health benefits! It's the number one super-food on the planet so forget all those fancy newfangled powders on the market that turn your food pink, black & blue..... all you need is this old trusted friend: CEYLON.
My 100g pack of ground Ceylon cost €1.25 compared that to pink pitaya which cost €15 for 100g!!!!! ouch!!! you couldn't buy this for a dollar a day but Ceylon is accessible for a lot of people & it's medicinal properties, using it is also cheaper than pharmaceutic medicines! So if you have problems with your blood sugar levels being too high, taking a tea spoon a day will keep the doctor away so to speak. So using cinnamon in desserts makes a lot of sense, where ordinary sugar will cause a spike, cinnamon can regulate that.

There are some extras missing here, how to make the quince compote and the cinnamon nice cream.... don't worry i'll walk you through it:
Quince compote
Quince is pretty new to me, actually this was my first time using it and I recommend it to anyone because it quite rare and over looked, it's only a available for a short time and full of antioxidants. It's said when people were talking about Apples throughout history, like the many references in religious scripture they were actually referring to quince which was way more readily available in the east than the conventional apple.
Cooking quince brings out this wonderful aroma to the fruit that is often considered quite bland. It absorbs the spices ( i used cloves & ceylon) and coconut sugar it's cooked in and creates this deliciously comforting winter warmer. But in the case of this sundae I served it only slightly warm as not to melt away my topping :)

Time for the NICE CREAM
This has to be my favorite part no matter what time of year it's never to cold for nice cream, the thing about it is because I'm only using frozen bananas once I start blitzing them in the food processor they go super creamy and really they aren't cold for long, as you can see in the pics it's already melting away but I love that effect. For the cinnamon flavor all you need to do is add 1/2 tablespoon whilst blitzing 4 frozen bananas. Then grab your ice cream scoop and spatula, without forgetting to lick the bowl. :)

I was surprised, it was better than expected, using the humble oats with the carob actually gave it the feeling like it was super indulgent like chocolate brownie, taking a scoop with the nice cream, quince and carob oats all together for me worked so well. The thing went down quicker than a blink of an eye! For me it was important to keep the ingredients humble and affordable, compote reminds me of my thrifty grandma who would save all the garden fruit for winter. The oats are my everyday staple, carob is local & abundant and much cheaper than cacao. Even by keeping my budget low which I felt was important for the charity theme for @adollaraday.... this quite literally would of only cost me around a dollar (per glass) to make. It is still possible to live thrifty & healthy but still enjoy a luxurious meal!
