Ripe tomatoes are always used to make delicious meals. Today, I used them to enhance the flavor of my lunch. I made a tomato vinaigrette and dressed everything I made to eat.

This is a light and complete meal. It had been a long time since I had eaten sweet potatoes. When I was a child, I loved their sweet taste. They are also a good source of carbohydrates, which are very necessary to balance the combination of chicken and salad that I made for lunch. Below, I will show you how I prepared this delicious, fresh, and nutritious menu.

INGREDIENTS FOR THREE PEOPLE - Chicken cut into thin strips, approximately 400 grams. - Sweet paprika - Ground ginger - Ground oregano - Finely chopped garlic - Table salt - Black pepper - Four red cabbage leaves - One white onion - Three romaine lettuce leaves - Tomato vinaigrette - Sweet potato, 400 grams. PROCEDURE

Chicken cooks fairly quickly. I used half a boneless chicken breast, cut into thin strips. The first thing to do is season it with salt, pepper, paprika, garlic, ginger, and oregano.

Mix everything together well. The chicken should be well seasoned. I cooked it on the grill, directly in a hot pan. Sauté the chicken strips until they begin to brown. Tomato vinaigrette:

To make this delicious vinaigrette, we need the following ingredients: - One tablespoon of apple cider vinegar. - One tablespoon of honey. - Two tablespoons of lemon juice. - Two ripe tomatoes, peeled and chopped into small pieces. - Ground oregano, 1/2 teaspoon. - Two tablespoons of olive oil. - Coarse salt. - Black pepper. Mix everything together well. The ripe tomatoes release all their flavor and juice. Here we see a rustic presentation, but you can also put it in a blender and then strain it through a sieve for a more elegant vinaigrette. However, I like to see the tomato pieces, and this also works well as a dressing for all kinds of meats. A secret I'll share with you is that you can substitute the oregano for any other herb, such as basil, dill, parsley, or chives. Cabbage and lettuce salad:

This salad is great because it's perfect for any occasion, it's simple and tasty, and any dressing goes well with it. To make it, chop the lettuce, cabbage, and onion into thin strips, mix all the ingredients together, and that's it—all you need to do is add the dressing.

Sweet potatoes are a great root vegetable. They're tasty and go well with this type of dish. Cook them with their skins on in boiling salted water until they're soft, then let them cool and peel them.

As you can see, I've dressed everything with vinaigrette. I really love making vinaigrettes; it's like an addiction or something similar. The good thing is that they're tasty, and if you use good ingredients, you won't have any problems.

Pollo y Ensalada de Repollo, aderezado con Vinagreta de Tomate

Los tomates maduros siempre se aprovechan para hacer comidas deliciosas, yo los utilicé hoy para realzar el sabor de mi almuerzo, hice una vinagreta de tomate y he aderezado todo lo que hice para comer.

Esta es una comida ligera y completa, hacía tiempo que no comía batata, cuando era niña me encantaba su sabor dulce, además es una buena fuente de carbohidratos, muy necesario para balancear la combinación de pollo y ensalada que hice para el almuerzo, les muestro a continuación la forma en que he elaborado este delicioso menú fresco y nutritivo.

INGREDIENTES PARA TRES PERSONAS - Pollo cortado en tiras delgadas, 400 gramos aproximadamente. - Paprika dulce - Jengibre molido - Orégano molido - Ajo finamente picado - Sal de mesa - Pimienta negra - Cuatro hojas de repollo morado. - Una cebolla blanca - Tres hojas de lechuga romana. - Vinagreta de tomate. - Batata dulce (boniato), 400 gramos. PROCEDIMIENTO

El pollo se cocina bastante rápido, yo hice media pechuga de pollo deshuesada, está picada en finas tiras, lo primero que se hace es aderezar con sal, pimienta, paprika, ajo, jengibre y orégano.

Se mezcla todo muy bien, el pollo debe estar bien aderezado, lo cociné a la plancha, directamente en un sartén caliente, las tiras de pollo se saltean hasta que comiencen a dorarse. Vinagreta de tomate:

Para hacer ésta deliciosa vinagreta necesitamos los siguientes ingredientes: - Una cucharada de vinagre de manzana. - Una cucharada de miel. - Dos cucharadas de zumo de limón. - Dos tomates maduros sin piel, cortados en trocitos pequeños. - Orégano molido, 1/2 cucharadita. - Dos cucharadas de aceite de oliva. - Sal gruesa. - Pimienta negra. Se mezcla todo muy bien, el tomate al ser maduro desprende todo su sabor y jugo, aquí vemos una presentación rústica, también se puede pasar por una licuadora y luego pasarla por un colador, así quedaría una vinagreta más elegante, pero para mí está bien ver los trocitos de tomate, ésto también sirve para aderezar todo tipo de carnes. Un secreto que les comparto es que puedes sustituir el orégano por cualquier otra hierba como: albahaca, eneldo, perejil o cebollino. Ensalada de repollo y lechuga:

Ésta ensalada es genial porque sirve para toda ocasión, es sencilla y sabrosa, cualquier aderezo le queda bien. Para hacerla debemos cortar la lechuga, el repollo y la cebolla, todo picado en tiras delgadas, mezclamos todos los ingredientes y listo, solo le falta colocarle el aderezo.

La batata es un buen tubérculo, es sabrosa y se adapta bien a éste tipo de comida, se cocina con su piel toda limpia en agua hirviendo con sal, se cocina hasta que ablande, luego se deja enfriar y se le retira su piel.

Como ya han podido observar yo he bañado todo con la vinagreta, realmente me encanta hacer vinagretas, es como una adicción o algo parecido, lo bueno es que son sabrosas y si utilizas buenos ingredientes no tendrás problemas.
