Hoy me desligo un poco de los _Postres Saludables_ para compartir con ustedes la receta de unas galletas típicas venezolanas. Las llamadas Catalinas o Paledonias son unas dulces galletas de textura muy suave, tradicionales y completamente venezolanas. La preparación es bastante sencilla, fácil y económica además de que este dulce tradicional es perfecto para merendar junto con una taza de café o chocolate caliente.

Today, I'm slipping a little bit of the _Healthy Desserts_ to share with you the recipe of some typical Venezuelan cookies. The so-called Catalinas or Paledonias are sweet cookies with a very soft texture, traditional and completely Venezuelan. The preparation is quite simple, easy and economical and this traditional sweet is perfect for a snack along with a cup of coffee or hot chocolate.

Sinceramente, esta es la primera vez que las preparo y lo hice con la intención de sorprender a mis abuelos. A ellos les encantan estas galletas, así que me pareció una excelente idea prepararlas y consentir a mis viejitos. Posiblemente no quedaron tan buenas como las que se suelen comprar en la panadería, pero creo que con la práctica las iré mejorando.

Honestly, this is the first time I prepare them and I did it with the intention of surprising my grandparents. They love these cookies, so I thought it would be an excellent idea to prepare them and pamper my old folks. They may not be as good as the ones you can buy at the bakery, but I think that with practice I will improve them.

Lo primero que hice fue preparar el melado o caramelo de [papelón](https://es.wikipedia.org/wiki/Panela) (conocido en otros países como panela, rapadura, piloncillo, chancaca). Para ello coloqué en una olla ½ taza de agua, 250 gramos de papelón en trocitos y 6 clavos de olor. Se lleva a hervor hasta disolver completamente el papelón, luego se cuela y se deja enfriar completamente antes de comenzar a elaborar las galletas (hay que reservar al menos dos cucharadas de este caramelo para barnizar las galletas antes de llevarlas al horno).

The first thing I did was to prepare the [papelón](https://es.wikipedia.org/wiki/Panela) (known in other countries as panela, rapadura, piloncillo, chancaca) caramel. For it I placed in a pot ½ cup of water, 250 grams of papelón in pieces and 6 cloves. It is taken to boil until the papelón is completely dissolved, then it is strained and it is left to cool completely before beginning to elaborate the cookies (it is necessary to reserve at least two spoonfuls of this candy to varnish the cookies before taking them to the oven).

En un recipiente se colocan: 2 tazas de harina (280 gramos), 1 cucharadita de canela, 1 cucharadita de bicarbonato de sodio. Se mezclan los ingredientes secos muy bien y se abre un hoyo en el centro para agregar un huevo completo, 4 cucharadas de mantequilla con sal (100 gramos) y el caramelo ya frío. Se mezcla todo y se comienza a amasar.

In a container, place: 2 cups of flour (280 grams), 1 teaspoon of cinnamon, 1 teaspoon of baking soda. Mix the dry ingredients very well and open a hole in the center to add a complete egg, 4 spoonfuls of butter with salt (100 grams) and the already cold caramel. Mix everything and start kneading.

Añadiremos un poco más de harina mientras amasamos hasta que la masa deje de pegarse a nuestras manos y al mesón donde estemos trabajando. Debe de quedar una masa muy suave y nada pegajosa.

We will add a little more flour while kneading until the dough stops sticking to our hands and to the table where we are working. The dough should be very soft and not at all sticky.

Con un rodillo se estira la masa, por lo general el espesor debe de ser de 1 centímetro, pero yo no las quería tan gorditas así que las hice de medio centímetro. Se cortan las catalinas con un cortador que posea 8 a 10 centímetros de diámetro. Se colocan en una bandeja previamente engrasada y enharinada o cubierta con papel para hornear, se barnizan con el caramelo que habíamos reservado y se hornean de 12 a 15 minutos a una temperatura de 180 °C.

With a roller you stretch the dough, usually the thickness should be 1 centimeter, but I didn't want them so fat so I made them half a centimeter. The catalinas are cut with a cutter that has 8 to 10 centimeters in diameter. They are placed on a previously greased and floured tray or covered with baking paper, varnished with the candy we had reserved and baked for 12 to 15 minutes at a temperature of 180°C.

Con estas cantidades de ingredientes obtuve 9 catalinas/paledonias de medio centímetro de espesor y 10 centímetros de diámetro.

With these quantities of ingredients I obtained 9 catalinas/paledonias of half a centimeter thick and 10 centimeters in diameter.

**CONSEJO:** No hay que dejarlas más de 15 minutos en el horno pues ellas tienen que quedar blanditas y si se hornean demás cuando se enfríen quedarán muy duras. **CONSEJO 2:** Hay personas que, luego de sacarlas del horno, las vuelven a barnizar con el caramelo. Yo no recomiendo esto, pues quedan muy chiclosas por encima. Yo lo intenté y de verdad no me gustó, así que bueno... de los errores se aprende.

**TIP:** Don't leave them in the oven for more than 15 minutes because they have to be soft and if they get too hard when they get cold. **TIP 2:** Some people, after taking them out of the oven, re-varnish them with the caramel. I don't recommend this, because they get very chewy on top. I tried it and I really didn't like it, so well... you learn from your mistakes.
